Steps to prepare the “Egg in a Tortilla” dish:

  1. Preheat the oven to 180 degrees. Put baking paper on an oven pan.
  2. Heat the oil in a pan and cook the onion until lightly golden.
  3. Add the garlic, spinach, and spices and continue to cook while stirring until the spinach loses its volume and softens. Remove from the pan to a plate and set aside.
  4. In the same pan, lightly heat the tortillas, about 30 seconds each.
  5. Assemble the dish: Place the tortillas on the pan, place a slice of cheese in the center of each, a heaping tablespoon of spinach and carefully top an egg. Close each tortilla in an open envelope. Tighten the edges of the tortilla so that they do not open during baking and brush them with oil.
  6. Bake 5 minutes.
  7. Sprinkle with the green onions and serve immediately
  8. Enjoy!
