  1. Heat the oil in a large, wide pot (preferably a cast-iron pot that can fit in the oven). Season the pieces of meat with salt and pepper and fry the pieces of beef for a few minutes on each side, until browned. Remove and set aside.
  2. Add the onion, celery, and carrots to the pot and fry for a few minutes until the vegetables soften and the onion is golden.
  3. Return the meat to the pot, add the garlic cloves, thyme, and bay leaves. Pour the wine so that it only covers the ingredients (if the two glasses of wine is not enough, add some more wine or water) and bring to a boil. Cover, transfer to a low heat and cook for 3 hours, until the meat is tender. You can also put the pot in the oven and bake for 3 hours at a temperature of 150 degrees celsius.
  4. At the end of cooking, cut the meat into smaller pieces and mix it in the sauce. Then, cook for another 10 minutes.
  5. Cook the pappardelle pasta according to the instructions on the package.
  6. Mix the pasta with the sauce and serve.
